- 150g mixed lettuce leaves
- 3/4 cup fresh flat-leaf parsley leaves
- 1/3 cup fresh dill sprigs
- 1 red apple, cut into thin matchsticks
- 2 tablespoons lemon juice
- 1 tablespoon extra virgin olive oil
- Place lettuce, parsley, dill and apple in a large serving bowl.
- Whisk lemon juice and oil together in a jug. Season with salt and pepper.
- Drizzle dressing over salad. Toss gently to combine. Serve.
